PALM STROOP / PALM SIRUP

PALM (RESIN) SIRUP
Palm (resin) SIrup is sweet and delicious in tea or coffee, or in desserts such as ice or a pancake Palm resin also tastes very good in some cheeses.
Palm sirup is extracted at the crown of the palm tree Phoenix canariensis.During the night the resin is drained.
The palm-tappers climb in the trees from eight o'clock in the evening onwards. They hang buckets under a dripping channel. These buckets are hoisted and emptied the next morning. During the day, the resin is evaporated to stop and counteract the fermentation process and to extend the shelf-life. Palm resin can be stored for more than 2 years.
The next evening, the "wound" in the crown is reopened with a special knife.
The "palmhoney" farmers, who are called guarapero's, go from tree to tree as a human bee. The whole production procces goes by hand. Climbing the tree happens without safety equipment.

· Ypadu is not to chew it but to suck it. Start taking one or two little spoons of Ypadu to the mouth (about 1-2 grams), without swallowing it. Afrikaanse rijst werd vorige eeuw nog op Jamaica en Brazile gekweekt, nu zijn het alleen nog de Marrons in Suriname en Frans Guyana die het gewas in ere houden (Van Andel 2010). Adrikaanse rijst heeft een lagere opbrengst per hectare dan Aziatische rijst en moet met de hand in een houten vijzel worden gepeld om te voorkomen dat de korrels breken. Deze rijst wordt gekweekt op maagdelijke grond in vers open gekapte stukken Amazone bos die maximaal 3 jaar gebruikt worden voor het verbouwen van gewassen ( Slash and burn). Daarna worden de kostgrondjes weer aan hun lot overgelaten en heeft het oerwoud weer vrij spel.
